(Simple) Soto Bandung

has numerous varieties of Soto. Some Sotos represent their origin place just like Soto Madura, Soto Banjar, Soto Blora, Soto Padang, Soto Betawi, Soto Mahakam, Soto Lamongan, Soto Pekalongan, Soto Bandung, etc. For this time, my choice goes to Soto Bandung. It becomes one of my favorite Sotos because of its fresh taste, its simple making process and its simple spices – doesn’t like other Sotos whose making process are little bit time consuming and whose gravies are oily. Besides, we only need to bruise the spices – energy saver, just perfect for fasting month haha :D. My Soto Bandung has simple ingredients, I skipped fried soy bean since I didn’t have one, yet it’s fresh taste had satisfied my hungriness from an all day long fasting :D. It’s crunchy white radish did give a fresh taste for the gravy – I did love it :D


Soto Bandung

Ingredients:
250 gram beef, cut into bite-size chunk
White radish, peeled then thinly sliced
500 ml water

Spices:
4 cloves of shallot, bruised
2 cloves of garlic, bruised
1 Bay leaf/Salam leaf
1 cm fresh ginger root, bruised
1 cm galangal, bruised
1 stalk lemongrass, bruised
Salt and ground white pepper to season
Sugar *you can add it as flavoring spice*

Toppings:
Green onion, chopped
Fried shallot
Fried soy bean (I skipped it)

Directions:
1. Boil the beef with the water to make stock. Meanwhile, sauté shallot, garlic, lemongrass, bay leaf, and galangal until fragrant. Bring the sautéed spice into the stock. Add ginger, salt, ground pepper, and sugar. Bring to boil until the stock boiling and the beef tender.
2. About one minute before being removed from heat, add the white radish. Wait until the white radish wilted.
3. Serve with the toppings on a bowl. Enjoy with warm steam rice. Hmm….You can also enjoy it with Candlenut Sambal. The recipe is HERE.

Soto Bandung

Bahan:
250 gram daging sapi, potong2
Lobak, kupas lalu iris tipis
500 ml air

Bumbu:
4 bawang merah, geprek
2 siung bawang putih, geprek
1 lembar daun salam
1 cm jahe, geprek
1 cm lengkuas, geprek
1 btg serai, geprek
Garam, gula dan merica bubuk secukupnya

Taburan:
Daun bawang, iris-iris
Bawang goreng
Kacang kedelai goreng (saya nggak pake)

Cara Membuat:
1. Rebus daging dan air. Sementara itu, tumis bawang merah, bawang putih, serai, daun salam, dan lengkuas sampai harum. Tuangkan tumisan bumbu ke rebusan daging dan air. Tambahkan jahe, garam, gula, dan merica bubuk. Masak sampai kaldu mendidih dan daging matang dan empuk.
2. Masukkan lobak kira-kira 1 menit sebelum diangkat, kira-kira sampai lobak layu. Angkat.
3. Sajikan dengan taburannya dalam sebuah mangkok. Enak juga dinikmati dengan sambal kemiri. Resep sambal bisa dilihat DISINI.
