Bakwan Daun Singkong
Besides rice, corn, and “instant noodle”, cassava is also a primary food for some Indonesians. It’s mostly consumed by the people who live in villages or in remote areas to substitute the rice. But now, it’s also modified into some modern traditional snacks that are many consumed by townsfolk. Cassava is dead easy to be planted here that an aphorism says, “Indonesia’s land is very fertile that if you put a stick on it you can change it into a tree” - The stick here refers to the cassava stalk *it was said by my elementary school teacher :p*. When I was a child and lived with my grandma in village, my uncle often put cassava stalks in a storeroom behind our house and he leaned them against the wall which has soil floor. In a few weeks later, there would always be many young leaves buds grew up from the sticks – and I always wondered with that since we never really cared those stalks. Besides its edible tuber, cassava leaves are often cooked into some foods too. The most recent cook I made with cassava leaves was Gulai Daun Singkong. For this post, I come across with the fried-form one. I got the recipe from Nova magazine, the original recipe uses shrimps instead of beef sausages. Hemm…. I did enjoy these fried cassava leaves with warm steamed rice, ajibbbb!!!!

Fried Cassava Leaves with Beef Sausages

Ingredients:
Cassava leaves, boiled then squish the water
2 beef sausages, small-diced
3 eggs, beaten
75 gram all purpose flour
100 ml water
Cooking oil to fry

Spices:
3 cloves of garlic, grind
½ tsp ground white pepper
½ tsp chicken powder *opt*
Salt and sugar to taste
1 red chili, angled-sliced
2 stalks green onion, thinly-angled-sliced

Directions:
1. In a big bowl, whisk the eggs, water, all spices and all purpose flour until well-mixed.
2. Add the cooked cassava leaves and sausages, mix well.
3. Scoop the batter with round spatula then fry on a hot oil. Fry until done.

Bakwan Daun Singkong

Bahan:
Daun singkong, rebus lalu peras airnya
2 sosis, potong dadu kecil
3 telur, kocok
75 gram tepung terigu
100 ml air
Minyak untuk menggoreng

Bumbu:
3 siung bawang putih, haluskan
½ sdt merica bubuk
½ sdt kaldu bubuk
Garam dan gula secukupnya
1 buah cabai merah, iris tipis serong
2 batang daun bawang, iris tipis serong

Cara Membuat:
1. Kocok telur, air, semua bumbu, dan tepung sampai rata dalam sebuah mangkok sampai rata.
2. Setelah itu tambahkan sosis dan daun singkong yang telah direbus dan diperas airnya, aduk rata.
3. Ambil sesendok sayur adonan kemudian goreng di minyak yang telah dipanaskan. Goreng sampai matang.
