CWIE MIE MALANG (Malangnese Style of Chicken Noodle)

Malang,
my hometown, can be called as one of well-known culinary spots in Indonesia, especially for its Bakso (beef balls) and a wide-range variety of noodle. One of my favorite noodles is Cwie Mie Malang, I often buy it in Food Court in Malang Town Square. Cwie Mie is almost similar with Mie Ayam (Chicken Noodle), but the chicken topping used for Cwie Mie is drier than the one used for Mie Ayam (Chicken Noodle). Cwie Mie uses fresh salad leaves, while Mie Ayam uses mustard green. I got the Cwie Mie recipe from Dapur Iboe. As you can see from the recipe I wrote below, you can say it’s somewhat a long recipe and think that cooking Cwie Mie will be time-consuming. But, don’t be hesitate to give it a go buddies, hope that the result will give you a smile :D

CWIE MIE MALANG
(Malangnese Style of Chicken Noodle)


Topping:
1.#1 Topping: Dice 150 gram chicken meat. Coat with instant spiced crispy chicken flour. Fry until golden brown. Set aside.
2.#2 Topping: Sauté 1 finely chopped cloves of garlic until fragrant. Bring in 100 gram finely chopped skinless chicken meat, stir until the chicken dry. Add ½ tbsp all purpose flour, stir evenly. Season with ground white pepper and salt, stir well again. Remove from heat.

Accompaniments:
Fresh salad leaves, rinse well and drain
Cucumber pickles (I used fresh sliced cucumber due to my laziness :D)
Fried wonton wrappers
2 tbsp chopped green onion
2 tbsp fried shallots

Noodle:
1.Pour hot water onto 250 gram wet noodle; let the noodle tender, drain.
2.In a big bowl, mix 1 tbsp vegetable oil, 2 tbsp light soya sauce, and ½ tsp salt. Bring in the noodle, mix them well. Set aside.

Gravy:
1.Bring to boil 1250 ml water, 2 tsp sautéed chopped garlic, ¾ tsp ground white pepper, 2 tbsp chopped green onion, and salt.

To serve:
1.Put fresh salad leaves in a bowl. Bring in the noodle, add with fried wonton wrappers and sliced cucumber. Sprinkle the toppings, chopped green onion, and fried shallots over it.
2.Serve with the gravy that is placed in another bowl. Enjoy! :D

Cwie Mie Malang

Taburan:
1. Taburan 1: Iris dadu 150 gram daging ayam. Balut dengan tepung bumbu ayam krispi instant. Goreng sampai matang kuning kecoklatan. Sisihkan.
2. Taburan 2: Tumis 1 siung bawang putih yang sudah dicincang halus. Tambahkan 100 gram daging ayam tanpa tulang yang sudah dicincang sangat halus, goreng dan aduk sampai daging ayam kering. Tambahkan ½ sdm tepung terigu, aduk rata. Bumbui dengan merica bubuk dan garam secukupnya, aduk rata kembali. Angkat.

Pelengkap:
Daun selada segar, cuci bersih lalu tiriskan
Acar mentimun (Saya pake timun biasa aja)
Kulit pangsit goreng
2 sdm daun bawang cincang
2 sdm bawang merah goreng

Mie:
1. Siram 250 gram mie basah dengan air panas, biarkan mie menjadi empuk, tiriskan.
2. Di sebuah mangkok besar, campur 1 sdm minyak sayur, 2 sdm kecap asin, dan ½ sdt garam. Masukkan mie, campur rata. Sisihkan.

Kuah:
1. Didihkan 1250 ml air, 2 sdt bawang putih cincang yang sudah ditumis, ¾ sdt merica bubuk, 2 sdm daun bawang cincang, dan garam.

Cara Menghidangkan:
1. Letakkan daun selada segar di mangkok. Tambahkan mie, tambahkan dengan kulit pangsit goreng dan irisan mentimun. Taburi dengan bahan taburan, daun bawang cincang, dan bawang merah goreng.
2. Sajikan dengan kuahnya di mangkok lain.

  2. @chan: waaaahhh... binggung juga nih, soalnya menurutku kalo siapa yang dominan sih kayaknya semuanya juga punya andil, kita suka gurih, manis, pedas, asin. Suka semuanya ^^. Tapi kalo menurutku sih lebih ke gurih :D
